Asparagus soup

This recipe is based on the leftover water when cooking asparagus. You can use this kind of broth to make a delicious soup. 

Servings: 4

Ingredients: 

  • 1 l leftover broth from asperges
  • 200 ml full cream 
  • few stalks of raw asperges, pealed and cut diagonal in chunks
  • finely chopped chives 
  • pepper and salt for taste

Method:

  1. In a medium sized pot mix the asparagus broth with the cream and bring to a boil. Once it Strats boiling turn of the heat. 
  2. Add de chunks of the asparagus and season for taste with pepper and salt. 
  3. Serve with chives on top.
