Warm green & white asparagus salad

Servings: 4


  • 250 g white asparagus, with peal chopped diagonal in chunks
  • 250 g green asparagus, with peal chopped diagonal in chunks
  • lemon zest of 1 lemon (biological)
  • lemon juice of 1 lemon 



  • chilli, mild and finely chopped 
  • shallot, fine chopped 
  • pinch of salt
  • 1 tsp sugar 
  • fresh ground pepper


  1. Heat up a medium skillet to medium heat. Add the sugar to the skillet and let caramelise briefly. Add the lemon juice. 
  2. Add the asparagus, shallot and chilli. Fry for about 2 minutes on medium heat. 
  3. Add the lemon zest, fresh ground pepper and salt.

You could garnish with some chives and or parsley. Serve together with some fried chicken or as side dish with a BBQ.
