Carbonara Sauce

Servings: 2


  • 3 large free-range egg yolks
  • 40 g Parmesan cheese , plus extra to serve
  • fried bacon
  • extra virgin olive oil
  • pepper




1.  Put the egg yolks into a bowl, finely grate in the Parmesan, season with pepper, then mix with a fork and put to one side.


2. Take your hot boiled pasta and add a splash of cooking water. 


3. Then pour in the egg mixture  and start to mingle. The heat will help to cook the egg.


4. Serve with fried bacon and sprinkle with a good olive oil and add some fresh ground black pepper on top.
