Poached pork filet with herb marinade


Ingredients:

  • 1,200 g fillet of pork
  • 1 handful of whole green pepper
  • 1 bunch chives, chopped
  • 1/2 bunch parsley, chopped
  • 1 bunch of thyme, chopped
  • Fleur de Sel
  • olive oil
  • 1 tablespoon butter


Instruction:

  1. Rinse pork with cold water, pat dry and parry.
  2. Mortars green pepper and mix with olive oil. Roll pork in pepper-oil mixture.
  3. Mix chopped herbs. Pork in the herb mixture wallow.
  4. Wrap the pork really tight in plastic foil. And afterwards in silver foil. 
  5. Turn stove on and bring a large pot of water to a boil.
  6.  Add poach pork for about 30 minutes in the water (the water should not boil anymore)
  7. Remove the pork from the water and rest for about 10 minutes. Fry around sharply in a pan with butter.
  8. Cover with aluminum foil, let rest briefly and cut into slices. Sprinkle with fleur de sel.
